Next problem - my bike has had a hydraulic conversion using master cylinders off a modern machine (I don't know which but I suspect from the land of the rising sun). Clutch and brake actuation work beautifully but there are no obvious bleed nipples. How do I bleed the sytems or change the fluid? I am also intrigued to know what other components have been used.
The clutch itself slips a bit so I need to investigate. Any advice on this too would be welcome.

I would guess this is probably a "saggers" conversion.
If you look inside the gear box inspection cover you should find the slave cylinder there with the bleed nipple at the top.
The brakes are probably mini parts, the bleed nipple is on the brake plate.
